Brain is not only deliciously scrambled with eggs, but also very nourishing. Pork brain with gravy is an increasingly popular southern delicacy. If you like French cuisine, the tête de veau is a decadent assortment of brain cavity, and mouth scrapings from a tender young calf. However if you get a chance to try Minangkabau cuisine I'd recommend a hardy dish of gulai otak, or angus brain drizzled with coconut gravy. Although if you want the best bang for your buck head to Norway for a heaping helping of some smalahove, it generously serves a small family a robust roast of sheeps brain, with a side of tongue and eyes.

Despite the brains inarguable deliciousness, there are some health issues concerning the large quantities of myelin in the brain. A single serving of myelin contains 3500 milligrams of cholesterol, or 1170% of our recommended daily intake. Chew wisely, and eat responsibly.
